Dr. Maureen Zimmerman earned her undergraduate degree in Nutrition and Dietetics at Arizona State University, and her Master's Degree in Public Health from the University of Hawaii. She earned her Doctorate in Educational Leadership, with a specialization in educational research, from Northern Arizona University. Maureen is a Registered Dietitian and has been a faculty member at Mesa Community College in Mesa, Arizona since 1991. She has been involved in many aspects of college and district life including cooperative learning facilitation, new faculty development, service learning leadership, distance learning and technology initiatives, Honors, Program Review, Kaleidoscope, Faculty Senate, the Maricopa Institute for Learning Fellowship, and the Department Chair of Design, Family and Consumer Sciences. She recently completed an 18 month stint as Acting Director of the Maricopa Center for Teaching and Learning of the Maricopa Community Colleges.

She is President of the Board of Directors at Tempe Preparatory Academy, a 7-12 grade charter school dedicated to providing the finest liberal arts education in the Phoenix metropolitan area.

Maureen lives in Tempe, Arizona with her husband, Jeff, and some of their five children. She jogs daily, enjoys reading a variety of genres and likes drinking good coffee with friends and family. If you play card games with her, be prepared to lose.

 

Lori Zienkewicz MS, RD

Lori Zienkewicz (pronounced: Zen kev ich) is a registered dietitian and nutrition faculty member at Mesa Community College. She earned a Bachelor's degree in Dietetics and Master's degree in Food Science from Kansas State University. Lori is currently working on a doctoral degree in Educational Leadership with an emphasis in higher education at Northern Arizona University.

Lori has been involved in teaching food science and nutrition at various educational levels, working as a clinical dietitian and researching food products for an international ingredient company. Her most memorable work experience was with the Walt Disney Company in Orlando, Florida during her undergraduate program.

Lori enjoys cooking, entertaining, traveling and watching college football. She also enjoys spending time with family, friends, and her two terriers: Belle and Sue.

Jennifer Koslo MS, RD, CSSD

 
 
Jennifer Koslo, a Registered Dietitian and Certified Specialist in Sports Dietetics, has been teaching food and nutrition in the Maricopa Community College District since spring semester 2004.

Jennifer received her B.S. in Biology from Juniata College, and earned dual M.S. in Human Nutrition and Exercise Science from Colorado State University, and her certification as a Registered Dietitian from the American Dietetic Association. She is currently working on her doctorate degree in education with an emphasis on curriculum and instruction.

Her extensive background in health and nutrition includes two and a half years serving in the US Peace Corps in Sierra Leone, West Africa. She has also worked as a cardiac rehabilitation dietitian in both the inpatient and outpatient setting, as well as done individual nutrition counseling. Jennifer worked at the Arizona Department of Health Services as the Chronic Disease Nutritionist from 2001-2003, where she wrote grants, and designed and implemented public health programs to prevent chronic disease. In addition, Jennifer is an American Council on Exercise Certified Personal Trainer, and has competed in marathons, duathlons, and numerous shorter races. She continues to run, lift weights, and cycle. Jennifer enjoys reading, cooking, and spending time with her cockapoo.

Laura H. May is a registered dietitian and a member of the American Dietetic Association. She received a BS in Nutrition & Food Science from Utah State University where she completed the Coordinated Program in therapeutic dietetics. She has experience working in long-term care, home health care, and outpatient counseling for people with HIV/AIDS. Laura completed a Master's degree in Educational Technology from Northern Arizona University. Many courses for her Master's degree were taken online. As a result, she has a deep understanding of the issues students may face while taking online courses.  Laura lives in Riverside, California and thus teaches online. Laura’s MCC Homepage

Deborah J. Robinson, R.D.

Debbie is a proven health promotion leader and registered dietitian with experience in community, corporate, commercial, and federal agencies. She received a bachelor’s degree in Health Fitness from Springfield College, Springfield MA followed by a second bachelor’s degree in Dietetics from the University of Rhode Island.

Debbie commissioned into the United States Air Force and served four years on active duty. She is currently in the Air Force Reserves attached to Luke AFB. She is a mentor and participant of The Leukemia & Lymphoma Society’s team in training cycling program and has completed several endurance events including the Tour de Tucson, a 111-mile ride. Debbie is an avid sports fan. Her two favorite teams are the Boston Red Sox and the New England Patriots.
